Fueling the Falcons

Chef Steve combines 30 years of experience and a love for the city of Atlanta when he's in the kitchen! Learn about his focus on nutrition, and how he's prepping the players to be stronger and more powerful on game day.

I've seen over the past couple of decades the pallet of Atlanta grow and change quite a bit.

I think it's become way more globalized.

I've been very hungry to learn as many different types and styles of not just cuisine, but restaurant management.

Being a chef for an NFL team is one of the most unique experiences I've ever had.

We had started the program from the standpoint of very chef driven, very cuisine driven.

Cooking as much from scratch as possible, locally sourcing ingredients, that sort of thing.

Our focus has to be on fueling athletes, being the gasoline that's going in that engine for them.

So we've had what I think is a unique opportunity, anyway, to work very collaboratively with the nutrition department.

Nutrition is kind of the master and commander of things.

So inspiration comes from everywhere.

I am always just so open to a new idea.

I'm not a "No," I'm always like a "Yes, and what else can we do? I love that idea," you know?

Can we look at it from another angle that we might be able to get a better idea about how to execute?

I will try very hard to break the norms of how something might be prepared.

So when I look back at my career, I've done a lot of crazy stuff, I've done a lot of big stuff, I've done a lot of complicated stuff but to take a program that I created the year prior and for it to fuel the drive for a team to go to its championship is just awesome.

Honestly it's about the best way I can explain it.

Doing this for 30 years now I have the acumen, the experience, the intellect, and the drive to basically be wherever I want to be.

The way that the Falcons conduct themselves within the community proved to me that it was the kind of organization that I wanted to be a part of.

I choose to be here because of them.

What do Falcons do?

Rise up.

When you think of Che Alexander, when you think of boss lady Che, you think of the Atlanta Falcons.

I'm the senior Vice President of this official supporters club.

I have been a fan since high school.

I am just the most die hard fan ever.

I don't even know how we function when it's not football season.

The tailgate culture, we're just a family, a real Falcon family.

It is a lot of logistics involved in this.

Game day routine starts on Friday at noon so I know how many people to prepare for.

Jahri is the chef so I have to run the menu by her.

Saturday is all prep day.

You clean the meat, you season the meat, you marinate.

When it comes to Atlanta tailgating, you've gotta have barbecue.

Ribs, chicken, hot dogs, hamburgers, baked beans, macaroni and cheese.

People walk up and be like, "Oh my god, these pork chops are really good. Oh I like these ribs. Oh this chicken was amazing. Who seasoned this? Who did that?"

I love to see people full, satisfied and it takes a lot out of you but it's so rewarding.

We try so hard to make sure that we include everybody because we know how fortunate we are to be able to go in the game.

These people, this family depends on this group to say, "Hey we want to come and enjoy ourselves."

So we have to put on a good show.

It's the companionship, the camaraderie, everybody enjoying each other.

I think the tailgating brings out the best in everybody, I mean, it's southern hospitality.

I love it.

I bleed it.

The red and black is what I am and who I am.

Atlanta is the place where people feel comfortable, you meet new friends, you never meet a stranger.

The Atlanta Falcons, they are Atlanta.

Being a part of the Falcon community is a dream come true.
